Sugarfree healthy muffins


For this recipe I was inspired by Franco Berrino’s “Alimentare il benessere”.

150 gr. flour “0” and 150 gr. wholemeal flour (or 300 gr. flour “2” or wholemeal spelled)
200 gr. corn flour
1 teaspoon yeast
2 organic lemon finely grated zest
1 pinch of salt
200 gr. raisins soaked in warm water or apple juice for 1/2 hour
1/2 liter of rice milk (alternatively you can also use soy milk or organic apple juice with no added sugar)
100 gr. corn oil o sunflower oil
For garnish:
1 handful of flaked almonds

muffin-1390368_1280HOW TO: first, soak the raisins and peel the zest of two organic lemons -be careful not to soak the white, which is very bitter- and preheat the oven to 180 degrees.
Combine all of the dry ingredients in a large bowl, and then slowly pour rice milk and vegetable oil, mixing everything well. The dough will be very moist and lemony.
With a spoon put the dough in the muffin forms. If using silicone moulds or baking paper you won’t have to oil your baking-pan, otherwise oil the pan entirely.
Bake for 25 minutes, let them cool and enjoy with a cinnamon tea!
